CHRISTMAS Thoughts 2005
Well, Christmas is upon us and we wish you and your family a warm and loving holiday season.
Although most of us are focused upon getting everything done before "the big day" arrives, we want to gently and lovingly remind you to remember the reason Christmas is so important to so many of us. Its not just about the religious aspects of Christianity, it’s more about the flavor of the season that infects most of us with that loving feeling of warmth and comfort in the darkest time of the year that makes it so magical. There is no mistake that Christmas falls at the darkest time of year in the northern hemisphere. Its is the one time when we need "a little cheer" to keep us from the despair of the darkest and coldest time of the year, similar to our ancestors who watched the shadow of the sun recede each year at this time and rejoiced as it started to return. Perhaps that's why the birth of Jesus is celebrated at this time of year because Christians can be thankful that the light of their Messiah has finally arrived and many other religions celebrate light and other aspects of renewal when they need it the most.
So please join us and take some time this year to be thankful for family and friends that are in your life. Take a moment to remember all that they do for you and acknowledge them when you next see them. Give them a hug and a kiss and remember to tell them you love them dearly. Then, if you will, consider taking a few moments to thank God (or whatever higher power you wish) for being given the chance to be here at this time in the world.
Last, take a moment to thank yourself for being here each day. Take a moment for yourself and reflect upon all of the things that make your life beautiful, joyous and lustrous. Recognize what part you've played in others' lives over the past year and give yourself a well-deserved pat on the back. You deserve to recognize your own good deeds at least once a year. Don't get puffed up with yourself, but recognize what you have done and commit yourself to doing even more next year.
Then, sit back and enjoy the holidays like you've never done before. Take the time to truly enjoy all of your family and friends like you'll never see them again. You never know . . . Its always best to make your very best connection with them daily. Then notice the difference in your life and enjoy it.
We thank all of you for taking the time to read this letter and supporting our efforts throughout the year. We wish everyone a blessed, joyous and peaceful holiday season filled with love.

A Christmas Prayer
Dear God,
My prayer in this Holy, Sacred Season is this:
That we may feel Your loving Presence within us and all around us not just this Holy Season, but always!
That we may see this season of remembering the birth of Christ not just as a miracle of the past,
but as an opportunity for all mankind to give birth to the Christ within ourselves in the Present.
That we may birth forth the Holy Christ Spirit of Love and Kindness from every heart today.
That we may chose to Love from our Hearts, instead of desiring being "right" in our minds, so that we may all become the Princes and Princesses of Peace, ushering forward in the New Year the promised World of Peace.
That all mankind will see this Season as a new beginning for everyone.
To make a true New Year’s resolution and commitment to birth forth;
Love, Light, Compassion, Kindness, Truth, and Peace in every Heart and in all Nations.
That we, from this moment forth, will live Peace on earth NOW!

CHESTNUTS
Chestnuts have been enjoyed for centuries, as far back as 1600 BC in ancient Chinese, Japanese and European cultures. Compared to other nuts, the chestnut has almost no fat, less than 5%. They consist of a very high quality of protein and are also rich sources of vitamins C and B6, fiber, iron, potassium, folate, phosphorus, riboflavin and thiamin.
Chestnuts can improve your health in several ways.
They promote weight loss
They protect your heart
They lower cholesterol
They combat cancer
They help to control blood pressure
Chestnuts are a perfect snack food. They have a sweet, delicious meat that is very filling and satisfying to eat. They make a great replacement for snacks that offer no nutritional value and only empty fat calories like chips, cookies, donuts, etc.
Chestnuts are low in calories. A 3/4 cup serving has 240 calories and provides more than 40% of the daily recommended dietary allowance of vitamin C, 35% of folate, 25% of vitamin B6, 3 grams of protein, 2 grams of fat (the good kind) and more than 10% of iron, phosphorus, riboflavin and thiamin.
Chestnuts contain mono-unsaturated fats, which is proven to lower your cholesterol. It also aids in lowering the LDL (bad) cholesterol that clogs your arteries. In other words, it will help you keep your arteries clean and open for optimal blood flow.
Potassium, fiber and vitamin C help your body control blood pressure, so in essence this wonderful little food will help you maintain a healthier heart.
Chestnuts aid in cancer prevention (in particular colon, bladder, breast and stomach cancer) as chestnuts contains fiber, folate and vitamin C.
Chestnuts are also a very alkaline food with a Ph of 5.0. Cancerous cells, viruses, yeast, bacteria and fungus cannot live in an alkaline environment. They can only live in acidic ones, which is why it is so important for us to eat healthy alkalizing foods such as chestnuts in order to stay or regain our health. |

Roasted Chestnuts
Instructions
Use the point of a paring knife to slash an X on the top of each nut, being sure to cut through the skin.
Bake in a single layer at 425 degrees F. for 10 to 15 minutes for 15 to 25 minutes until tender. If you wish, stir nuts occasionally during the roasting time.
Peel chestnuts while they're still warm. If they cool so much that the shell won't easily come off, reheat them briefly.
Chestnut Rice Recipe
Ingredients
12 ounces chestnuts
3 cups white or brown rice
3-1/2 cups water for white rice
or 5 cups water for brown rice
1 teaspoon sea salt
2 tablespoons mirin ( sweet Japanese rice wine)
Instructions
Spread the chestnuts on a cookie sheet, and roast in a 350 degrees F. oven for about 40 minutes. With a sharp knife, remove the chestnut shells, peeling off the brown skins if necessary. (They are very bitter.)
Wash the rice and add the water, sea salt, and mirin in a pot or rice cooker. Add the shelled chestnuts, cover, and cook 15 minutes for white rice or 45 to 50 minutes for brown rice. Let set for 10 to 15 minutes. With a shamoji (flat, wide wooden rice spatula) or wooden spoon, mix and fluff up the rice, and serve immediately.
Yield: 6 servings
Chestnut Bisque Recipe
Ingredients
2 medium carrots, diced
1 onion, chopped
2 stalks celery, chopped
1 parsnip, diced
2 Tablespoons butter or canola oil
1-1/2 pounds frozen ready-to-use chestnuts, thawed
6 cups vegetable stock
1/2 cup port wine (optional)
1/4 cup apple juice concentrate
1/2 cup parsley, chopped
Pinch of ground nutmeg
1/2 teaspoon salt
Freshly ground black pepper to taste
2 teaspoons fresh tarragon or 1/2 teaspoon dried
Nonfat sour cream or yogurt (optional)
Instructions
Melt butter in large saucepan over medium heat. Add carrots, onion, celery and parsnip and saute until soft, about 7 minutes. Add chestnuts and continue cooking 5 minutes, stirring occasionally.
Add stock and bring to a boil. Reduce heat to low and add wine, apple juice, parsley, nutmeg, salt, and pepper. Simmer 15 minutes. Add tarragon and continue cooking 5 minutes.
Puree two thirds of the soup in a food processor or blender. Return soup to saucepan and reheat. Adjust seasonings. Serve with a dollop of sour cream.
